Carrot and Celery Slaw


Serves 8, as a side dish.

Ingredients:

4 carrots, grated or cut into matchstick size (or buy them already grated in a bag)

4 stalks of celery, grated or cut into matchstick size

Choice of either Creamy Dill Dip or Cucumber Yogurt Dip -2 Tbsp.

Mix ingredients together and put into a reusable container.

 

Dill Dip

Ingredients:

1/4 cup sour cream

1/4 cup mayonnaise

1/4 cup plain yogurt

1/4 cup fresh dill, finely chopped

1 clove garlic, grated on a zester

Salt and pepper to taste

Mix all together and serve with fresh vegetables cut into bite-sized pieces.

 

Cucumber Yogurt Dip

Ingredients:

2 cups of cucumber, seeded and grated

1 1/2 cups of Yogurt Cheese*

2 Tbsp each, Dill, Mint and Chives, chopped finely

1 Tbsp lemon juice

2 cloves garlic, grated

Salt and pepper to taste.

 

Place the grated cucumber in a sieve lined with a paper towel and store in the fridge until needed.

In a medium bowl, mix together the remaining ingredients, cover and store in the fridge until ready to use.

Just before serving, combine the cucumber with the yogurt mixture and season to taste with salt and pepper.

*To make yogurt cheese, line a sieve with a coffee filter and spoon in yogurt. Place the sieve over a bowl and put into the fridge overnight. All the liquid will drain from the yogurt, leaving you with youfurt cheese that is the consistency of cream cheese.
