French Toast Strata

“All By Myself” recipe for kids age 6+.  

1 tbsp butter
1 loaf French Bread
¼ cup raisins
8 large eggs
3 cps whole milk
2 tbsp sugar
1 tsp vanilla extract
1/4 tsp cinnamon

Directions: Place 1 tablespoon of butter in a small bowl and microwave on high for 20 seconds. Stir it with a fork until melted. Pour the butter into a 9x13” pan. Rub butter over the inside bottom and sides of pan. Using your hands, tear the bread into thumb-sized pieces and place them in the prepared pan. Sprinkle the raisins evenly over the bread. Crack the eggs into a large bowl and use a fork to beat them together. To the bowl with the eggs, add the milk, butter, sugar, vanilla and cinnamon. Beat again with a fork until the mixture is light yellow and you can no longer tell the difference between the milk and the eggs. Pour the egg mixture over the bread and raisins. Cover with aluminum foil and refrigerate over night. In the morning, preheat the oven to 350 degrees. Place the strata in the oven to bake, leaving the aluminum foil in place. Bake 30-40 minutes, or until light golden brown. To test to see if it is done, put a fork in the center and pull a little of the bread back. There should be none of the egg mixture still visible. Serve with maple syrup and bacon or sausage.
