Stuffed Pumpkin

This is a nice alternative to pumpkin pie. Actually, some food historians would say this is similar to the pumpkin dessert the early settlers made. It is like the ancestor to the pumpkin pie.

Ingredients:

1 8-10 inch pumpkin
1 cup cranberries

1/2 cup dates

1/3
cup walnuts
1 cup tart apples, cored and chopped
1/4 cup brown sugar
2 tsp. pumpkin pie spice
1 Tbsp. orange rind, grated

Directions:

  1. Cut off the top of the pumpkin and save. Scoop out inside.
  2. Combine all ingredients and fill pumpkin.
  3. Bake without top for 45 minutes at 350°F.
  4. Place top on pumpkin and continue baking for 30 minutes. Serve warm.
